Mandarin Poppy-Seed Salad

A light, and wonderful summertime entree that we guarantee you'll love!

ManoMeter - Difficulty:  a monkey could do it! (very easy)


Ingredients
3/4 cup salad oil (I use canola)
2 tbsp red wine vinegar
1/3 cup honey
1 tsp regular mustard
1 tbsp finely chopped onions
1 tbsp poppy seeds
1 tsp salt
 
Mandarin oranges
Roasted slivered almonds (roast in microwave / regular oven, watch continuously so they don't burn)
1 large head of Romaine lettuce
1 large head of Red Leaf lettuce
 
Method: 
Mix the first seven ingredients and refrigerate for several hours or overnight
(This is the trick to making this dressing taste great!)
 
Toss salad with dressing and add drained mandarin orange pieces and almonds.
 
Tip: Put the freshly roasted almonds, while still warm from the microwave, on top of the salad, it tastes even better!
 
Serve immediately!
